- 1 1/2 cup flour
- 1 cup sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 2 eggs, beaten
- 1 cup shredded carrot
- 2/3 cup vegetable oil
- 1/2 cup crushed pineapple, with juice
- 1 tsp vanilla
Set oven to 350
Combine first six ingredients in a large bowl. Give a quick whisk to blend.
Stir in the remaining ingredients and beat at medium speed until well combined (about 2 minutes)
Pour into a greased and floured 9x5 loaf pan and bake for 50 to 55 minutes.
